Description
This alfredo sauce is high in protein, tastes great over pasta or spaghetti squash (like I did with my 'Mac' and 'Cheese' and Avocado Pesto), and much lower in fat than traditional. Instead of butter and cream, here I'm utilizing cottage cheese (or Greek yogurt) for a delicious and creamy sauce that's much lighter than a standard alfredo

Ingredients
- 1.5 cup (339 g) Nonfat cottage cheese ($1.48)
- 1/2 cup (120 g) Skim milk ($0.08)
- 1/2 cup (50 g) Grated parmesan cheese ($0.66)
- 1 tbsp (14 g) Extra virgin olive oil ($0.19)
- 1 tbsp (10 g) Garlic powder ($0.11)
- 1 tbsp (8 g) Cornstarch ($0.03)
- 1 tbsp (3.0 g) Thyme, dried ($0.08)
- 1 tbsp (2.6 g) Oregano, dried ($0.11)
- 1 tbsp (2.2 g) Basil, dried ($0.00)
- 1 tsp (2.2 g) Black pepper, ground ($0.07)

Instructions


1.  In a food processor, blend together all ingredients until smooth. Serve over pasta (1 lb box) or spaghetti squash (~4 lb squash), or use as a salad dressing
