Description
No bake energy bites were the first healthy baking recipe I had ever made. I had gotten this recipe from a friend 6 years ago or so, so I feel like it's time to bring it back. I've made some light modifications, like swapping the honey for dates instead. These energy bites are a great grab and go snack, or topping to your morning Greek yogurt. Ingredients
- 1/3 cup (80 g) Water ($0.00)
- 1/2 cup, about 12 deglet noor or 4 medjool (80 g) Dates ($0.47)
- 1/2 cup (128 g) Almond butter ($1.12)
- 1 cup (80 g) Quick oats ($0.27)
- 2/3 cup (80 g) Unsweetened coconut flakes ($1.07)
- 1/2 cup (70 g) Ground flaxseed ($0.53)
- 1 tbsp (12 g) Chia seeds ($0.11)
- 1/2 tsp (5 g) Vanilla extract ($0.03)
- 2 tsp (5 g) Cinnamon ($0.08)

Instructions
1.  Add your dates to a medium bowl, and pour hot water over them. Let soak for 10 minutes. Blend the dates, soaking water, and nut butter until smooth in a food processor. Transfer to a large bowl


2.  Mix the rest of your ingredients together in the bowl. Chill in the fridge for at least 30 minutes so the oats, chia seeds, and flaxseeds can absorb the moisture


3.  Below are some ingredient substitutions or mix in idea to change things up:

- Both quick oats or rolled oats will work here

- Any sort of nut or seed butter will work here. Normally, I use either almond or peanut butter, but here I've used tahini for a friend with a nut allergy. Other good options would be sunflower butter, pistachio butter, pumpkin seed butter, cashew butter, etc.

- In place of the dates and water, you can use 1/4 to 1/3 cup (84 to 112 g) of honey or maple syrup

- Optionally, add in some mix-ins. Good choices are 1/2 cup (90 g) mini chocolate chips, 1/2 cup (85 g) raisins, or 1/2 cup (70 g) chopped nuts

4.  Lightly wet your hands to prevent sticking, and roll into balls. Store in an airtight bag or container in the fridge
