Description
These meatballs are gluten free, and can be made with ground beef, turkey, or chicken. They taste great, and can be eaten on their own, or mixed into a sauce and pasta, like I did here with zucchini noodles. I used my Simple Pasta Sauce recipe here, but feel free to use whatever sauce you desire. Pesto would be great too, like my Lightened Extra Virgin Olive Oil Pesto, Creamy Pesto Dip, or my Avocado Pesto - Vegan and Oil Free

Ingredients
Meatballs
- 1 lb (453 g) Ground turkey, 93/7 ($3.98)
- 1 scoop (30 g) Casein protein powder, unflavored ($0.79)
- 1 large (50 g) Egg ($0.12)
- 2 tsp (6 g) Garlic powder ($0.07)
- 2 tsp (5 g) Onion powder ($0.07)
- 2 tsp (5 g) Chili powder ($0.06)
- 2 tsp (5 g) Paprika ($0.08)
- 1 tsp (2 g) Black pepper, ground ($0.06)
- 1/2 tsp (3 g) Salt ($0.00)

Zoodles
- 3 medium (588 g) Zucchini ($1.91)
- 1 tbsp (14 g) Extra virgin olive oil ($0.19)
- 1 tsp (4 g) Onion powder ($0.05)
- 1 tsp (2 g) Garlic powder ($0.02)
- 1/2 tsp (1 g) Black pepper, ground ($0.03)
- 1/2 tsp (3 g) Salt ($0.00)
- 8 oz (227 g) Crushed tomatoes ($0.44)

Instructions
1.  Preheat your oven to 400F, and prepare a large cookie sheet with parchment paper

2.  In a large bowl, beat your egg, and mix with the rest of the ingredients. Mix with your hands until just combined

3.  Scoop your mixture (using a cookie scoop helps), roll into balls, and place on your sheet pans


4.  Roast the meatballs in your 400F oven for about 14-16 minutes, or until cooked through and reach a temperature of at least 165F. Set aside

5.  Meanwhile, warm up (or cook) your sauce in a medium pot over medium low heat

6.  As the sauce simmers, use a spiralizer to cut the zucchini into zoodles, and add to a large pan with oil over medium heat. Season, cover, and cook until desired texture is reached

7.  Mix together the sauce and the zoodles. Top with meatballs and serve
