Description
This edible cookie dough is so simple, and a much healthier way to enjoy a classic treat. They use casein protein as the flour, but for a non protein version, you can use oat flour. Ingredients
Chocolate Chips
- 1 tbsp (14 g) Extra virgin coconut oil ($0.21)
- 3 tbsp (16 g) Cocoa powder ($0.02)
- 1/4 tsp (1 g) Liquid stevia or monk fruit ($0.06)
- 1 tsp (6 g) Honey ($0.06)
- Small pinch (0 g) Salt ($0.00)

Cookie Dough
- 1/4 cup (61 g) Unsweetened applesauce ($0.14)
- 1.5 tbsp (32 g) Honey ($0.35)
- 1 tsp (4 g) Vanilla extract ($0.02)
- 1/2 tsp (3 g) Liquid stevia or monk fruit ($0.20)
- 1/4 tsp (2 g) Salt ($0.00)
- 2 scoop (60 g) Casein protein powder, unflavored ($1.59)
- 1/4 cup (60 g) Unsweetened vanilla almond milk ($0.07)

Instructions
1.  Start by preparing your chocolate. In a microwave safe bowl, melt the coconut oil. Combine with the rest of the chocolate ingredients - cocoa powder, sweeteners (stevia/monkfruit and honey), and a small pinch of salt

2.  Line a Tupperware with parchment paper. Use a silicone spatula to scrape all the melted chocolate into the pan. Freeze to harden

3.  For the cookie dough, combine the ingredients in a medium bowl in the following order - applesauce, honey, vanilla, monk fruit or stevia, and salt. If you have some, 1/4 tsp (1.25 g) butter extract would work great here as well.

4.  For your flour, use oats for the standard version, or casein for the protein version. Casein absorbs a lot of liquid, so you will need some milk too. If you're using oats, use 120 g and no milk. For casein, use 60g protein and 60 g almond milk

5.  Chop up your chocolate, and fold into the cookie dough. Roll into balls, transfer to an airtight bag or container, and enjoy
