Description
RX Bars are one of the processed snacks that I will occasionally buy, as they're pretty healthy protein bar and lack any ultra processed ingredients. They are quite pricey though, so I prefer to make them myself. They're dead simple, and way cheaper than what you can get at the store.

Ingredients
- 1/2 cup (72 g) Almonds ($0.63)
- 1/2 cup (73 g) Peanuts ($0.39)
- 1.5 scoop (45 g) Whey protein powder, unflavored ($1.01)
- 1/4 cup (22 g) Cocoa powder ($0.03)
- 28 pitted (224 g) Dates ($1.33)
- Pinch (0 g) Salt ($0.00)

Instructions
1.  Prepare an 8" square baking dish by lining it with parchment paper. Soak your dates in hot water for about 10 minutes to soften. Set aside the water

2.  Blend in the cocoa and protein powder for about 30 seconds, or until fully incorporated.

3.  Finally, blend in the dates. Season with salt to taste. You should have a sticky but workable dough. Add a little of the soaking water if needed

4.  Transfer dough to the pan and flatten into a square. Pack it down, and make sure it's even thickness

5.  Chill in the fridge for a few hours before slicing
