Description
These simple cookies are made with simply mashed banana and quick oats. They can be easily customized by switching out the banana for unsweetened applesauce, pumpkin puree, or really anything you can think of. Or feel free to fold in whatever mix-ins you like, such as chocolate chips, raisins, or chopped nuts

Ingredients
- 1 medium (110 g) Banana, overripe ($0.14)
- 1 cup (80 g) Quick oats ($0.27)
- Pinch (0 g) Salt ($0.00)

Instructions
1.  Preheat your oven to 350F and line a cookie sheet with parchment paper

2.  In a bowl, add your banana, and mash with the back of a fork until smooth. Mix in the oats, with an optional small pinch of salt


3.  Some other great options instead of banana are: 4. 
 Unsweetened Applesauce 5. 
No Sugar Added Apple Spread 6. 
 Canned Pumpkin Puree 7. 
Roasted Sweet Potato Puree 8. 
Roasted Butternut Squash Puree 9. 
Low Sugar Berry Jam 10. 
Below is a batch I made with homemade blackberry jam (left) and applesauce (right)


11.  At this step, you can add any other flavors if you like. A dash of cinnamon or vanilla would be great, or you can fold in some mix-ins like chocolate chips or nuts

12.  Scoop onto your lined tray, and lightly flatten the tops. Bake at 350F for about 12 minutes. Transfer to a wire rack to cool
