I normally cook with the jars of minced garlic (aka “jarlic”) because it’s more convenient, but it lacks that garlic-y pungency of fresh garlic. The problem is that fresh garlic is a pain to work with. It’s papery and annoying, makes a mess, and hard to chop. What’s an easy and cheap way to get around this problem?
You can buy frozen garlic paste cubes that you can easily chuck in a dish for plenty of garlic flavor with little effort. These products can be fairly expensive though. But they’re pretty easy to make on your own.
My grocery store recently had a ton of garlic on sale. I was able to get all these cloves for just $2.32. I’m going to be roasting my own garlic, mashing it into a paste, freezing them in ice cube trays, and then transferring to an airtight bag. Whenever I want some garlic in my cooking (so always lmao), I just have to chuck a frozen cube in my food and have it defrost. Boom, easy roasted garlic!
Instructions
- Preheat your oven to 350F, and line a cookie sheet with parchment paper.

Separate the individual cloves from the whole head, but don't peal them. Wrap a handful of garlic cloves in aluminum foil, and place on the cookie sheet

Roast at 350F for about 1 hour, or until the garlic is soft and lightly brownied. Unwrap each of the foils to allow the garlic to cool for a few minutes

Squeeze the cloves of garlic out from the skin into a bowl (this is the fun part). Mash with a fork until you have a smooth paste

Add your garlic paste to an ice cube tray, and freeze until solid, about 2 hours. Transfer to an airtight bag, and store in the freezer
