Merry Christmas! What better way to enjoy a morning Christmas brunch with your family than by dipping homemade biscotti into your coffee or hot chocolate. This is a small batch of homemade biscotti that's free of gluten and refined sugar, and baked in your air fryer, so they're nice and crunchy. You can check out any of my other cookie recipes!

Ingredients
Serving(s)
Dry
- 1 cup + 2 tbsp Oat flour
- 1/4 cup Almond meal
- 1 tbsp Cornstarch
- 1/2 tsp Baking powder
- 1/4 tsp Salt
Wet
- 1 large Egg
- 2 tbsp Maple syrup
- 1 tsp Vanilla extract
Mix-in
- 1/4 cup, chopped Almonds
Instructions
Cook Mode Off: Prevents screen dimming
- Preheat your air fryer to 360F, and cut a piece of parchment paper that will fit inside. You can also use an air fryer liner
- In a large bowl, combine together the dry ingredients - oat flour, almond meal, cornstarch, baking powder, and salt
- In a separate bowl, beat together the wet ingredients - egg, maple syrup, and vanilla
- Combine together, and mix until just combined. Fold in roughly chopped nuts
- Transfer to your parchment paper or air fryer liner, and form into a rectangle
Notes
- Almond meal is ground whole almonds, as opposed to almond flour, which is ground blanched almonds. If you don't have almond meal, then blend some whole almonds in a food processor until fine
- For chocolate biscotti, replace 2 tbsp (10 g) of oat flour with cocoa powder, or maybe fold in some chocolate chips instead of almonds
