 These easy and healthy bread rolls are made from just rolled oats, cottage cheese, and eggs. They take only a few minutes to prep and rest, and they bake up nice and thin and crispy, perfect for a sandwich or toast. Here, I made a pulled chicken sandwich using my Two Ingredient Salsa Chicken

  • 2 large Egg
  • 14 tbsp Nonfat cottage cheese
  • 1 tsp Baking powder
  • 1/2 tsp Salt
  • 2.5 cup Rolled oats
Instructions

  1. In a medium bowl, beat your eggs with a fork until smooth. Add in your (blended) cottage cheese, baking powder, and salt. Mix with a silicone spatula until fully combined

  2. Add in the rolled oats, and fold together until well combined. The batter should look too wet; let chill in the fridge for at least 30 minutes, so the oats can soak up the excess moisture


  3. Preheat your oven to 400F, and line a cookie sheet with parchment paper. Scoop the batter onto the pan (about 100 g each). Lightly wet your hands, and shape into an even circle. Optionally, top with everything bagel seasoning


  4. Bake at 400F for about 20 minutes, or until browned and firm to the touch


  5. Transfer to a wire rack to cool before slicing in half. Store in an airtight bag in the fridge for up to 1 week, or indefinitely in the freezer
