Ah cuccidati, my favorite cookie of all time, and a staple of Christmas for me. Traditionally, these are Sicilian cookies filled with figs, and sometimes nuts and chocolate. They're essentially a fancy Fig Newton that's also glazed in sugar. Most recipes actually don't have any added sugar in the filling, just in the dough and the glaze. But I'm making my all time favorite my way today, which means no butter, oil, wheat, or sugar in these cookies. Dare I say that these taste better than the originals? I think it's pretty damn close.

Filling
- 3 medium Mandarin orange
- 1.25 cup, about 28 deglet noor or 9 medjool Dates
- 1 cup Water
Dough
- 1.25 cup Almond flour
- 1 cup Oat flour
- 2 tsp Baking powder
- 1/4 tsp Salt
- 1/2 cup Unsweetened applesauce
- 1/4 cup Almond butter
- 1 tsp Vanilla extract
Instructions

- Peel your oranges, and add to a small food processor. Blend until smooth, and transfer to a medium pot along with dates (cut in half) and water
- Simmer the filling over medium heat (covered for the first half) for about 30-40 minutes with occasional stirring. The mixture should be thick and jam like, and the dates should mashed and broken down. Optionally, stir in some rum extract (1 tsp, 4 g). Let cool completely before filling the cookies
- For the dough, whisk together the dry ingredients - almond flour, oat flour, baking powder, and salt. Add in the applesauce, nut butter, and vanilla, and mix with a silicone spatula until fully combined
- Roll out your dough between 2 pieces of parchment paper. It should be about 10x15 inches, and 1/8-1/4 inch thick. Cut the rectangle down the center to have 2 doughs of 5x15 inches each. Add the filling lengthwise to the center of each of your dough rectangles
- Use the parchment paper to gently fold the cookies together, seam side up. Use the parchment to turn it over, so the seam is now on the bottom. Cut into cookies
- Place cookies on a parchment lined baking sheet (seam side down). Bake at 350F for 12 minutes, or until lightly golden on the outside. Let cool totally before serving
