 Date snickers were a delicious trend a while ago. I've made them a few times, but I wanted to write it down here and share the "recipe", because they're a delicious snack that will even have any non-healthy dessert eaters be impressed. They're simple just dates filled with nut butter and dipped in chocolate. I first had them when Vic made them for my birthday, and I've got to say they're one of the best things I've ever tasted

Ingredients

  • 16 deglet noor Dates
  • 1/3 cup Chocolate chips
  • 1/2 tsp Extra virgin coconut oil
Instructions

  1. Line a small plate with a piece of parchment paper or aluminum foil, and set aside

  2. Split each date in half with your hands, making sure not to rip it in half. Just open it up, and place onto the plate

  3. Microwave your peanut butter if necessary to get it liquidy, and fill each date with a little bit of peanut butter. Close the dates, and place the plate in the freezer for 15 minutes to firm


  4. When firm, melt chocolate chips and coconut oil in the microwave until smooth. Lightly dip each date into the chocolate, and return to the plate


  5. This recipe calls for exactly the amount of chocolate the dates should take for accurate nutritional information, but you should melt more (probably 1.33x the amount) to ensure you have enough to actually coat the chocolate. I measured the before and after weight to see how much chocolate each date got, but you need to have a little excess in the bowl to be able to cover them

  6. Optionally, sprinkle the tops with flakey salt. Freeze for another 15 minutes to harden, and store leftovers in the fridge or freezer
