 Home fries are a great breakfast side with eggs consisting of potatoes and sometimes peppers and onions. I almost always use sweet potatoes instead of regular potatoes, as they have much more flavor and nutrients. Try whipping this up alongside my Spinach and Onion Frittata, Tomato and Egg Shakshuka, or Spinach & Mushroom Scrambled Eggs, or serve as a side with dinner

Potatoes
  • 3 medium (390 g) Sweet potato ($0.80)
  • 1/2 tbsp (7.5 g) Extra virgin olive oil ($0.11)
  • 1 tsp (3 g) Paprika ($0.05)

  • 1 medium (110 g) Onion ($0.36)
  • 1 medium (120 g) Bell pepper ($0.53)
  • 1 tsp (5 g) Soy sauce, low sodium, gluten free ($0.07)
  • 1 tsp (5 g) Extra virgin olive oil ($0.07)
  • 2 tsp (10 g) Minced garlic ($0.06)
  • 1 tsp (3 g) Garlic powder ($0.04)
  • 1 tsp (3 g) Chili powder ($0.04)

Instructions

  1. Wash and dice your sweet potatoes into bite sized cubes. Don't peel the potatoes. Season with oil, paprika, onion powder, salt, and pepper


  2. Air fry the potatoes for 30 minutes at 400F, mixing halfway

  3. Meanwhile, cut your onion and pepper into a small dice. Add to a bowl and season with soy sauce, oil, minced garlic, garlic powder, chili powder, black pepper, and salt


  4. Heat a large pan over medium heat and add in your peppers and onions. Cover and cook under occasional stirring until the onions are translucent and the peppers are soft

  5. When the potatoes are finished, combine them in the pan with the vegetables. Top with dried parsley, and serve with eggs
