Do you ever just want one cookie? You want a nice and delicious chocolate chip cookie, but you don't want to be left with a whole batch? Well you're in the right spot. This recipe is essentially a scaled down version of my Keto Chocolate Chip Cookies, enough to make 1 large sized cookie. Or check out any of my other cookie recipes!

Ingredients

- 2 tbsp Cashew butter
- 1 tbsp Granulated monk fruit
- 1/2 tsp Vanilla extract
- 1 tbsp Sugar free chocolate chips
Instructions
Cook Mode Off: Prevents screen dimming
- Preheat your air fryer to 300F on the air fry setting
- Mix together nut butter, sweetener, and vanilla extract until smooth and you have a cookie dough texture. Fold in 2/3 (10 g) of your chocolate chips
- Cashew or almond butter are best for their neutral flavor and buttery texture. Peanut butter will work, but only if you want a distinctly peanut butter chocolate chip cookie. For nut free, try tahini or sunflower seed butter
- Flatten the cookie onto a small piece of parchment paper, shape into a circle, and top with your remaining chocolate chips
- Air fry at 300F for about 12 minutes, or until golden brown


Alternatively, below is a recipe using coconut oil as the fat instead of a nut or seed butter. It's essentially my Classic Chocolate Chip Cookies recipe using coconut oil and granulated monk fruit in place of butter and sugar, and scaled down to 3 servings (1 large cookie)


The instructions are the same. Combine all ingredients together in a small bowl, flatten onto a sheet of parchment paper, and air fry at 300F for about 12 minutes, or until golden brown

- 1 tsp (5 g) Unsweetened almond milk
- 1/4 tsp (1.25 g) Vanilla extract

- 3 tbsp (22.5 g) Whole wheat flour
- 1 tbsp (15 g) Sugar free chocolate chips
