 This is a stupid idea I had the other day: a protein bar, with no protein powder. I've been making a ton of Copycat Barbell Protein Bars lately, and wanted to do something similar. Instead, I'll be mixing together Greek yogurt with powdered peanut butter until I get a thick dough, chill it, and coat in chocolate. With no protein powder, these bars still have 21 g of protein in around 220 calories, with no added sugar or artificial sweeteners

  • 1 tbsp Extra virgin coconut oil
  • 3 tbsp Cocoa powder
Instructions

  1. In a medium bowl, mix together yogurt, vanilla, sweetener, and salt. Add the powdered peanut butter, and combine with a silicone spatula until you have a fully mixed dough


  2. Line a plate with parchment paper. Divide the dough in half (85 g each), and shape into 2 protein bars


  3. In a small bowl, microwave coconut oil for 30 seconds to melt. Add in cocoa powder, and stir with a silicone spatula until smooth. Evenly spread on top of the bars. The chocolate won't look perfect or pretty, and that's okay. Paint the melted chocolate over the top and the sides of the bars


  4. Freeze for 30 minutes to harden. Wrap each bar in parchment paper or aluminum foil, and store in an airtight bag in the fridge or freezer
