Description
This salad dressing still packs healthy fats while being vegan and oil free. It feels like a vegan Caesar dressing, using avocado and olives instead of mayo and anchovies. It's perfectly tangy and sweet from the balsamic, creamy from the avocado, and "cheesy" from the nutritional yeast. Each serving is about 2 tbsp, or 30 g.

- 1 medium Avocado
- 3/4 cup Water
- 11 pitted Kalamata olives
- 1/4 cup Balsamic vinegar
- 1/4 cup Nutritional yeast
- 2 tsp Dijon mustard
- 1 tsp Garlic powder
- 1 tsp Onion powder
- 1 tsp Oregano, dried
- 1/2 tsp Black pepper, ground
Instructions
Cook Mode Off: Prevents screen dimming
- Blend all ingredients in a small food processor until smooth. Adjust consistency by adding water if necessary, and add salt to taste if necessary (I thought it was good as is). Transfer to a container, and store in the fridge
