Description
 Sloppy joes are an American classic, and this variation removes the sugar filled ketchup and adds some more vegetables as well. These go great on a plate with a side of rice, roasted veggies, sweet potatoes, or on a sandwich.

Vegetables
  • 1/2 tbsp Extra virgin olive oil
  • 1 medium Onion
  • 3 medium Bell pepper
Meat & Spices
  • 1.3 lb Ground turkey, 93/7
  • 1 tbsp Minced garlic
  • 6 oz can Tomato paste, canned
  • 3/4 cup Water
  • 2 tbsp Dijon mustard
  • 1 tbsp Apple cider vinegar
  • 1 tsp Paprika
  • 1 tsp Chili powder
  • 1/2 tsp Black pepper, ground
  • 1/4 tsp Salt
Instructions

  1. Finely chop the peppers and onions. Place a medium skillet over medium heat with oil. When the pan is hot, add onions and peppers. Cover and cook under occasional stirring until the onions are translucent, about 10 minutes

  2. Add the meat to the pan, and cook until no longer pink. When the meat is nearly done, add the garlic and cook until fragrant

  3. In a medium bowl, whisk together the sauce - tomato paste, water, mustard, vinegar, paprika, salt, and pepper. Pour into the pan, cover, and let simmer over low heat for about 15 minutes. Remove the cover, and simmer for an additional 5 minutes to thicken
