Description
 Sloppy joes are an American classic, and this variation removes the sugar filled ketchup and adds some more vegetables as well. These go great on a plate with a side of rice, or even better on a sandwich.

Vegetables
  • 1/2 tbsp Extra virgin olive oil
  • 1 medium Onion
  • 3 medium Bell pepper
Meat & Spices
  • 1.3 lb Ground turkey, 93/7
  • 1 tbsp Minced garlic
  • 6 oz can Tomato paste, canned
  • 3/4 cup Water
  • 2 tbsp Dijon mustard
  • 1 tbsp Apple cider vinegar
  • 1 tsp Paprika
  • 1 tsp Chili powder
  • 1/2 tsp Black pepper, ground
  • 1/4 tsp Salt

  1. Finely chop the peppers and onions. Place a medium skillet over medium heat with oil. When the pan is hot, add onions and peppers. Sauté, stirring occasionally

  2. Meanwhile, in a large skillet with oil, brown the meat. When the meat is nearly done, add the garlic and cook until fragrant

  3. To the meat mixture, add the vegetables, tomato paste, water, mustard, vinegar, paprika, salt, and pepper. Stir well to combine. Cook covered over medium-low heat (about 10 minutes) until hot and ground meat is cooked through and peppers are tender

  4. Season with additional salt and pepper to taste.
