Description
 Classic Spinach Artichoke Dip is a game day staple, but also a calorie bomb. I lightened it up here by avoiding all the cream cheese, mayo, sour cream, and ranch, but still while preserving that great taste. This goes great with some carrots, chips, or on a salad. This dip is significantly lower in calories and fat, while also being higher in protein, making it more filling and full of nutrients compared to the original. Ingredients

  • 14 oz can Artichokes
  • 5 oz Frozen spinach, thawed
  • 1 cup Plain nonfat greek yogurt
  • 1/2 cup, blended Nonfat cottage cheese
  • 3/4 cup Shredded mozzarella cheese, low moisture part skim
  • 3/4 cup Shredded cheddar cheese
  • 1/4 cup Grated parmesan cheese
  • 1 tbsp Extra virgin olive oil
  • 1 tsp Black pepper, ground

  1. Preheat oven to 400F. Drain and rinse your artichokes, and chop into small pieces. Squeeze your defrosted spinach in a paper towel over the sink until water no longer drips out

  2. Directly in a 9" square baking dish, mix together the artichokes, spinach, yogurt, cottage cheese, 1/2 cup (56 g) shredded mozzarella, 1/2 cup (56 g) shredded cheddar, grated cheese, olive oil, and black pepper. Top with your remaining 1/4 cup (28 g) of shredded mozzarella and 1/4 cup (28 g) shredded cheddar


  3. Bake at 400F for 25 minutes (uncovered), or until lightly bubbly. Let cool for a few minutes before serving
