Description
Marzipan, or almond paste, is a sweet dough made of almond flour and sugar that serves as the basis for Amaretti Cookies and Rainbow Cookies.
Or, you can cut it up into pieces, coat it in chocolate, and have a very simple candy recipe. Vic is a big fan of marzipan chocolate candies, so I'm making a homemade version for her today for Easter!

Ingredients

- 14 oz Marzipan
- 1 cup Chocolate chips
- 1 tbsp Extra virgin coconut oil
Instructions
Cook Mode Off: Prevents screen dimming
- Line a cookie sheet with parchment paper, and place a wire rack on top
- Cut your marzipan into 40 pieces, about 1/2 tbsp (10 g) each. Add to the wire rack
- Add chocolate chips and coconut oil to a medium bowl. Microwave in 20 second intervals, stirring in between with a silicone spatula, until you have a smooth melted chocolate
- Chill for 30 minutes to harden. Store in the fridge
Notes
- Marzipan and almond paste are very similar, though slightly different ingredients. Below you can see marzipan on the left, and almond paste on the right. Almond paste has a higher proportion of almond flour, while marzipan is a bit higher in sugar.
I used a tube of each here, but either one will work. Almond paste tastes slightly less sweet with a bit more of an almond flavor compared to marzipan in isolation.
But when they're covered in chocolate they taste identical. Use whatever you have / can find in your store
- Marzipan can be quite expensive. On Amazon three 7 oz containers will cost about $16.20. That's quite expensive to make some homemade candy! That means the entire batch will cost $13.03!
Storebought marzipan may also contain some "wheat starch", meaning that it's not gluten free.
For less than half the price (and gluten free), you can make your own marzipan. Blend together almond flour and granulated sugar until combined. Add in almond extract and water to form your marzipan dough. The whole batch will cost $5.01, with each serving being $0.13
- 1 1/2 cup + 2 tbsp (182 g) Almond flour
- 3/4 cup (150 g) Granulated sugar
- 1 tbsp (15 g) Almond extract
- 2 tbsp (30 g) Water
- You can also make this chocolate covered marzipan sugar free by using granulated monk fruit in your homemade marzipan instead of sugar, and also using sugar free chocolate chips. The whole batch will cost $7.37, with each serving being $0.18

- Here's a lazy version of this recipe
- Line a small pan with parchment paper
- Press the almond paste down into an even and flat layer
- Pour melted chocolate on top, and optionally top with coconut flakes
- Chill, then cut
