Most vegan "protein" bar recipes on the internet are not a protein bar, they're an energy bar. They're usually loaded with dates, maple syrup, and nut butter, and just happen to contain some protein powder. Some don't even use protein powder at all, relying on nuts as their primary "protein" source.
This vegan protein bar is different. Each bar contains 19 g of protein for under 120 calories, with just enough carbs and fat to improve the texture and taste while keeping the protein to calorie ratio in check. They're no bake, easy to make, freeze well, and are naturally vegan, sugar free, gluten free, and nut free.

Dry Ingredients
- 6 scoop Pea protein powder, unflavored
- 2 tbsp Cocoa powder
- 1/4 tsp Salt
Wet Ingredients
- 1 cup Water
- 1/4 cup Sugar free syrup
- 2 tbsp Extra virgin coconut oil
- 1 tsp Vanilla extract
Instructions
Cook Mode Off: Prevents screen dimming
- In a large bowl, whisk together the pea protein, cocoa powder, and salt.
- Add in the the water, liquid sweetener, melted coconut oil, and vanilla, and mix with your hand wearing a kitchen glove. The dough should look a little too dry, but hold together easily when pressed.
- Firmly press the mixture into a parchment lined 9" square pan.
- Refrigerate for at least 2 hours before slicing into 8 protein bars.
- Store the protein bars in the fridge for up to 1 week, or in the freezer indefinitely.
Notes
- You can also make these protein bars with maple syrup or agave instead of sugar free syrup.
