Description
 This healthier cheesy rice and broccoli uses my homemade Gooey Cheese Sauce, and is dead simple to put together. Just simmer the rice, roast the broccoli, and mix with the sauce. Nice and simple vegetarian meal with still a decent amount of protein for not having any meat. For another recipe with my Gooey Cheese Sauce, check out my Two Ingredient Mac & Cheese

Ingredients
Serving(s)
Rice
  • 1 cup Brown rice
  • 1 tsp Bouillon powder
  • 2 cup Water
Broccoli
  • 2 lb Frozen broccoli, thawed
  • 1/4 cup Lemon juice
  • 1 tbsp Paprika
  • 1 tbsp Chili powder
  • 1 tbsp Garlic powder
  • 1 tbsp Onion powder
  • 1/2 tsp Salt
Cheese sauce
Instructions

  1. Add rice, bouillon powder, and water to a medium pot. Cover and bring to a boil over high heat. Reduce to medium, and let simmer for about 20 minutes, until fully cooked and water is absorbed. Set aside

  2. Add your broccoli to a bowl, and season with lemon juice, paprika, chili powder, garlic powder, onion powder, and salt. Transfer to a parchment lined cookie sheet, and roast at 400F for about 30 minutes, until tender and lightly charred. Set aside

  3. In a large bowl, combine together the rice, broccoli, and Gooey Cheese Sauce. Divide into 4 servings
