Description
 This icing recipe is great for Healthier Cut Out Cookies or as a dip for Gluten Free Graham Crackers, making it great for this time of year. It's free of added sugar, butter, and cream cheese. Just blend dates with high in protein cottage cheese or Greek yogurt, and you have a simple frosting for your cakes! Each serving is about 2 tbsp or 29 g

Ingredients

  • 4 oz, about 17 deglet noor or 5 medjool Dates
  • 1 cup Nonfat cottage cheese
  • 1 tsp Vanilla extract
Instructions

  1. Add the dates to a bowl, and cover with warm water. Let soak for 10 minutes to soften. Other unsweetened dried fruit will work, like raisins, prunes, or figs

  2. Add dates, cottage cheese, and vanilla to a small food processor. Blend until smooth, scraping down the sides every minute. Try to get the dates as best chopped as possible
