Description
 Fajitas are a go to meal as they're a fun way to build your own food at the table. We'll have some sauteed chicken and peppers, along with rice, beans, cheese, tortillas, lettuce, and Tropical Fruit Salsa. Make tacos, or make it into a bowl, and mix it up as you see fit.

Ingredients

Chicken Marinade
  • 2 lb Boneless skinless chicken breast
  • 1/3 cup Fat free Italian dressing
  • 1/3 cup Hot sauce
  • 1/3 cup Lime juice
  • 1/2 tbsp Extra virgin olive oil
  • 1 tbsp Thyme, dried
  • 1/2 tsp Allspice, ground
  • 1/2 tsp Nutmeg, ground
  • 1/4 tsp Cinnamon
Onions & Peppers
  • 3 medium Bell pepper
  • 2 medium Onion
  • 2 tbsp Fat free Italian dressing
  • 2 tbsp Hot sauce
  • 2 tbsp Lime juice
  • 1/2 tbsp Extra virgin olive oil
Instructions

  1. Cut up the peppers and onions and add them to a large skillet. Dice up the chicken and add to a large bowl

  2. Prepare the marinade in a bowl and mix with the diced chicken - Italian dressing, hot sauce, lime, oil, thyme, allspice, nutmeg, and cinnamon

  3. Cook the peppers, onions, and seasoning (oil, Italian dressing, hot sauce, lime, and thyme) over medium heat until fully cooked. Set aside

  4. Cook the chicken over medium heat until fully cooked

  5. Add in the peppers and onion and mix

  6. Serve with Classic Rice and Beans, and Oat-Wheat Tortillas, or over a salad
