Mint has a reputation for growing like a weed, so let's put some of Vic's to good use. Here's a recipe for dairy free creamy mint sauce. It has a base of soaked cashews and chickpeas to make it creamy while still keeping it lactose free.

- 1/2 cup Cashews
- 15.5 oz can Chickpeas, NOT drained or rinsed
- 1 tbsp Lemon juice
- 1 tbsp Apple cider vinegar
- 1 tsp Liquid monk fruit
- 1 oz Mint, fresh
Instructions

- Add your cashews to a small bowl. Pour in just the liquid from the can of chickpeas. Let the nuts soak in the aquafaba for at least 2 hours at room temperature to soften
- Add all ingredients (cashews, aquafaba, chickpeas, lemon juice, apple cider vinegar, liquid monk fruit, and fresh mint) to a food processor. Blend until smooth and creamy
