Description
After making my Tangy White Chocolate with buttermilk powder and coconut oil, I wanted to put it to good use. What I came up with were these no bake white chocolate protein brownies.
They feature a base of protein powder, carob powder, unsweetened applesauce, liquid monk fruit, oat flour, and coconut flour, all topped with a ganache made out of the homemade white chocolate.
They're entirely sugar free - brownies and ganache included, only featuring liquid monk fruit as an external sweetener. Each bar packs 10 g of protein, along with 3 g of fiber and 6 g of fat, making one or two of these a great pre or post workout snack.

Ingredients

Brownies - Dry
- 4 scoop Whey protein powder, vanilla
- 1/2 cup Carob powder
- 1/3 cup Oat flour
- 1/4 cup Coconut flour
Brownies - Wet
- 2 tsp Liquid monk fruit
- 1 tsp Vanilla extract
- 1 cup Unsweetened applesauce
Ganache
- 1/4 cup Water
Instructions
Cook Mode Off: Prevents screen dimming
- Line a pan with parchment paper. I'm using a 7x11" pan here, but you can use a standard 9" square
- In a large bowl, mix together the dry ingredients for the brownies
- Add in the wet ingredients, and combine with a silicone spatula until you have a fully combined and sticky dough
- Transfer the batter to your prepared pan. Smooth out the top. Freeze for 30 minutes to harden
- Roughly chop your white chocolate, and add to a medium microwave safe bowl with water. Microwave in 15 second intervals, stirring in between with a silicone spatula, until you have a smooth ganache
- Pour the white chocolate ganache on top of the brownie base. Tilt the pan to spread the ganache over the entire brownie
- Freeze for at least 2 hours before slicing into 12 bars. Slightly separate them so they're not touching
- Freeze until fully solid, about 2 hours. Store in the freezer with parchment paper between each bar
