I love hummus; it's easily my favorite dip for vegetables and dressing for salad. Lately I've been experimenting with other flavors, so I've made this roasted beet hummus. Beets give this hummus a mild sweet taste, while making them creamy and vibrant red

Ingredients
Serving(s)
- 3 medium Beets
- 15.5oz can Chickpeas, drained and rinsed
- 1/4 cup Lemon juice
- 2 tbsp Almond butter
- 2 tbsp Minced garlic
- 1 tbsp Paprika
- 1/2 tsp Salt
- 1/2 tsp Black pepper, ground
Instructions
Cook Mode Off: Prevents screen dimming
- Cut the ends off your beets, wrap in aluminum foil, and bake wrapped beets at 400F for 40 mins or until a knife goes through with ease
- Combine roasted beets (with skins!) with the rest of ingredients in a food processor, and blend until smooth
- Optionally, saute the stems and leaves with a little salt and olive oil until crispy, and use as a garnish on top of your hummus
