 Today, I'm celebrating Pi day by combining 3 recipes together to make a healthy banana cream pie. With my Healthier Graham Cracker Pie Crust, Banana Bread Hummus Spread, and Aquafaba Whipped Cream, you end up with a delicious pie that's significantly lower in sugar and fat than traditional! Before dessert though, I'm celebrating Pi day with a Whole Wheat Deep Dish Pizza Pie

  1. Prepare the Healthier Graham Cracker Pie Crust by mixing all ingredients together in a bowl, shaping into a 9" cake pan, and baking at 350F for 15 minutes, until lightly browned. Refrigerate to cool


  2. Drain your chickpeas, saving the liquid (aquafaba). Blend the chickpeas with the rest of the filling ingredients to make the Banana Bread Hummus Spread


  3. Spread the Banana Bread Hummus Spread on top of the Healthier Graham Cracker Pie Crust. Set aside


  4. Finally, make the Aquafaba Whipped Cream. Beat together aquafaba and lemon juice on high heat until stiff peaks, about 5 minutes. Beat in vanilla and sweetener for about 2 minutes to combine


  5. Evenly spread the Aquafaba Whipped Cream on top of the pie, and optionally dust the top with cinnamon. Refrigerate for at least 2 hours before slicing and serving
